Bakery Manager

JOB OVERVIEW

The Bakery Manager oversees the production of bread products for an Eataly location, including but not limited to: breads, pizza alla pala, rolls, focaccia and seasonal items. The Bakery Manager leads and develops the bakery team in a 24-hour operating bakery.

Reports directly to the General Manager (GM) of Retail and reports functionally to the Bakery Quality Head.

  • Manages the bakery team of 15-20 employees: hires; schedules and approves vacation; submits payroll; provides feedback and motivation; trains on products, ingredients and processes; handles terminations
  • Prepares bread products for restaurant and retail operations in accordance with Eataly’s authentic Italian recipes and quality standards
  • Maintains and nurtures natural yeast, local and organic flour, and naturally leavened products
  • Follows prescribed training programs for all team members
  • Collaborates closely with the GM of Retail to manage Front of House (FOH) bakery retail operations, ensuring all necessary parties are aware of daily bakery activities including absences, schedule coverage and product availability
  • Collaborates closely with the GM of Quick Service to manage FOH bakery and Quick Service operations, including the Pizza alla Pala counter
  • Communicates with the Executive Chef, GM of Retail and Bakery Quality Head on new recipes
  • Orders and monitors inventory of all ingredients and products for the bakery, including tracking and documenting daily transfers and waste in the appropriate system
  • Reviews financial information such as sales/costs and monitors budget to ensure efficient operation and spending within the specified budget; works with the GM of Retail to correct any deviations from the budget
  • Maintains a clean and sanitary food production area according to Department of Health standards
  • Documents, investigates, elevates and resolves employee and guest incidents
  • Performs other duties as required or assigned

QUALIFICATIONS

  • 5+ years of experience in bread and related production
  • 2+ years of experience managing a sales and production team; preferably in a grocery bakery department
  • Excellent communication skills
  • Outstanding time management stills
  • Proficiency in Microsoft Office
  • Degree from a post-secondary culinary program highly preferred

JOB REQUIREMENTS

  • Availability to work onsite and manage a 24-hour operating team: flexible, open schedule often including evenings, overnight, weekends and holidays
  • Ability to work in excess of 40 hours per week when needed
  • Ability to lift up to 50 pounds
  • Ability to exert well-paced mobility for up to 8 hours, including standing, walking, bending and squatting
  • Ability to work with a wood burning oven, electric pizza convection oven and commercial spiral mixer
