Lead Artisan - Fish

Eataly Dallas will open in 2020 in NorthPark Center. Eataly was founded in Italy in 2007 and has since expanded to more than 39 locations (and counting!) across the globe. Eataly is a place where you can EAT, SHOP and LEARN about high-quality, authentic Italian cuisine. Each Eataly location contains an array of restaurants, cafés, to-go eateries, fresh counters (think Italian cheese and meat, and fresh pasta made in front of you!), a grocery market with more than 10,000 products, and a cooking school.

The Lead Artisan - Fish attends to the fish preparation needs of the department: ordering, receiving, cutting, cleaning, weighing, packaging and displaying. Reports to the Fish/Meat Counter Manager. 

  • Prepares fish and seafood according to counter and back-of-the-house needs: fabricates, cuts, cleans, and cooks for salads and oven-ready items  
  • Sets up and restocks the fish counter and display refrigerators in a neat, accurate and timely manner  
  • Monitors stock levels and makes key decisions about inventory control; places orders following templates 
  • Meets with the Fish/Meat Counter Manager regularly to understand daily tasks, production lists and department goals 
  • Receives orders: thoroughly logs products and checks quality, organizes the walk-in, stocks, resets cases to standard 
  • Weighs, packages and labels fish 
  • Displays and stores food in the appropriate temperature conditions as per Department of Health standards 
  • Cleans work station thoroughly 
  • Assists guests with fish selection, and shares knowledge of preparation and cooking techniques if requested 
  • Performs other duties as required or assigned 


  • 3+ years of experience working with fresh fish 
  • Good knife skills  
  • Expansive knowledge of seafood 
  • Customer service and/or sales experience in a retail environment preferred 
  • High school diploma or equivalent preferred 


  • Availability to work a flexible schedule including weekends 
  • Ability to lift up to 50 pounds 
  • Ability to exert well-paced mobility for up to 8 hours, including standing, walking, bending and squatting 
  • Ability to work with knives, hand tools, utensils and equipment to cut fish  
  • Food Handler’s License
