Eataly’s Salumi and Formaggi department is home to 500+ of the highest quality cheeses and cured meats, specially sourced from Italy, internationally, and domestically. Many of the cheeses are entirely exclusive to Eataly. Eataly’s Fresh Pasta and gastronomia department is home of the highest quality of fresh pasta made in house from the best quality ingredients and the craftmanship of the most experienced artisans.

At Eataly, the Salumi Formaggi Assistant Manager is also referred to as the Artisan Lead. The Artisan Lead supervises the salumi and formaggi, fresh pasta, gastronomia and fish retail counter and provides customer service and operational support for those counters, all of which are encompassed in Eataly’s Fresh Island. Reports to Salumi & Formaggi Manager, and Fresh Market Manager.

  • Assists the retail counters with daily operations as needed to ensure counters are running smoothly
  • Utilizes sales techniques to maximize store sales performance
  • Builds and maintains relationships with guests
  • Assists guests with cheese, cured meats, pasta and gastronomia food selection, and shares knowledge of products
  • Meets with the Salumi & Formaggi manager regularly to understand daily tasks, production lists, and department level goals
  • Liaison with the Fresh Pasta Manager for everything related to pasta and gastronomia food production schedule to achieve maximum efficiency
  • Monitors stock levels and makes key decisions about inventory control
  • Order supplies and merchandise as needed
  • Receives orders by thoroughly checking products in, organizing the walkin, stocking, and resetting cases to standard
  • Stocks counter and display refrigerators neatly, accurately and in a timely manner
  • Cuts-to-order, slices, weighs, labels, displays, sells and packages products per department standards and guest specifications
  • Cares for and handles products with a strong attention to quality control and waste management
  • Manages transfers between departments to ensure accurate inventory levels and Cost of Goods Sold (COGS)
  • Works alongside the team to train and develop individual operational and service skills
  • Ensures standards for quality, guest service, and food safety and sanitation
  • Cleans work station thoroughly following food safety best practices
  • Supervises cleaning and maintenance of equipment, and arranges for repairs and other services
  • Inspects production, counter and storage areas to ensure that health and safety regulations are followed
  • Performs other duties as required or assigned


  • 2+ years in a retail/food service supervisory position
  • Basic computer and math skills
  • Excellent communication skills
  • Ability to work and multitask in a fast-paced environment
  • Knowledge of Italian technique and cuisine
  • Associates Degree or Bachelors Degree highly preferred


  • Availability to work onsite with a flexible schedule often including weekends 
  • Ability to lift up to 50 pounds
  • Ability to exert well-paced mobility for up to 8 hours, including standing, walking, bending and squatting
  • Ability to operate equipment such as a commercial mixer, pasta machine and slicer
