JOB OVERVIEW

The Meat and Fish Lead supervises all functions and activities of the Meat and Fish department in order to achieve the sales, profit and labor goals established for the department. Reports directly to the Fresh Market Manager and reports functionally to the Meat and Fish Quality Head.

  • Supervises and motivates the team to improve product knowledge, sales and efficiency
  • Butchers meat and seafood per guest requests and provides excellent service at all times
  • Provides recipe and preparation recommendations to guests when appropriate
  • Cuts and prepares various types of meat and fish to be sold in the marketplace and served in restaurants
  • Complies with company quality standards when butchering and ensures work stations comply with Department of Health standards
  • Manages stock levels and makes key decisions about stock control, assisting with ordering supplies and merchandise as needed
  • Manages production schedule to achieve maximum efficiency
  • Communicates any technical or mechanical issues to the appropriate department
  • Performs other duties as required or assigned

QUALIFICATIONS

  • 2+ years of experience butchering fish and meat in a guest service setting
  • 1+ year of retail supervisory or management experience
  • Solid time management skills
  • Excellent attention to detail
  • Knowledge of Italian technique and cuisine preferred

JOB REQUIREMENTS

  • Availability to work a flexible schedule including weekends
  • Ability to work with commercial butchering equipment including band saw, knives, hand tools, etc.
  • Ability to lift up to 50 pounds
  • Ability to exert well-paced mobility for up to 8 hours, including standing, walking, bending and squatting
  • Food Handles license preferred
